Delicious 21 Day Fix Meatloaf


My family LOVED this meatloaf.  Even the kids gobbled it down without complaint.  It's probably my favorite 21 day fix meatloaf recipe that we've tried in 2.5 years. I hope you love it too!  


Ingredients
  1. 1 1/2 lbs lean ground turkey
  2. 2 eggs
  3. 1 cup shredded zucchini/shredded carrot mix 
  4. 1/2 cup quick oats
  5. 1/2 cup yellow onion (chopped)  {or sub dried, flaked onions - 1/3 C]
  6. 1 tsp sea salt
  7. 1 tsp oregano, dried
  8. 1/2 tsp parsley, dried
  9. 1/4 tsp black pepper
  10. 1 clove garlic, minced
sauce
  1. 4 Tbsp Raw Honey
  2. 1 can tomato paste
  3. 1/4 cup cooking sherry
instructions
  1. Heat oven to 375 F.
  2. In large bowl, add all ingredients (except the sauce ingredients), mix well until combined
  3. Press the meat mixture into a loaf pan
  4. In small bowl, whisk sauce ingredients together. Remove meatloaf from oven, spread mixture over the loaf and cook for 1 hour.
  5. Increase oven temp to 450 F and cook for another 8 minutes 
  6. Let stand 5 minutes before serving. Enjoy!

  1. 1/6 of the loaf is 1 Red, 1/4 (or so) Green, 1 tsp, 1/4 Yellow (if you want to get technical)
