My family LOVED this meatloaf. Even the kids gobbled it down without complaint. It's probably my favorite 21 day fix meatloaf recipe that we've tried in 2.5 years. I hope you love it too!
Ingredients
- 1 1/2 lbs lean ground turkey
- 2 eggs
- 1 cup shredded zucchini/shredded carrot mix
- 1/2 cup quick oats
- 1/2 cup yellow onion (chopped) {or sub dried, flaked onions - 1/3 C]
- 1 tsp sea salt
- 1 tsp oregano, dried
- 1/2 tsp parsley, dried
- 1/4 tsp black pepper
- 1 clove garlic, minced
sauce
- 4 Tbsp Raw Honey
- 1 can tomato paste
- 1/4 cup cooking sherry
instructions
- Heat oven to 375 F.
- In large bowl, add all ingredients (except the sauce ingredients), mix well until combined
- Press the meat mixture into a loaf pan
- In small bowl, whisk sauce ingredients together. Remove meatloaf from oven, spread mixture over the loaf and cook for 1 hour.
- Increase oven temp to 450 F and cook for another 8 minutes
- Let stand 5 minutes before serving. Enjoy!
