But before we cut to the chase, let's chat. So you all know that I've been bragging about losing 65 lbs this past year right?? (how could you not, I post it all over social media wink emoticon ). Well, I want you to know that THIS girl does NOT like to starve....I LOVE FOOD!! heart emoticon heart emoticon heart emoticon I love to smell it, and cook it, and EAT it!
(side story: when I was first dating my husband, he took me to eat at Mitchell's Fish Market for a romantic evening. It was the first time we sat down to have a meal together...When the food came and I started to chow down, he was like, "WOW, you eat the MOST out of any woman I've ever dated!" .....long awkward pause while I let that sink in.... How do I respond? Um....thanks? Smooth moves Romeo? Hells Ya I like to eat? What kind of twigs have you been dating (no offense if you are one of those twigs)? I just shrugged my shoulders and went back to my yummy plate of goodness. And YES, I still married him.....and YES, I schooled him in the art of eating wink emoticon ).
So now you understand that I DO LOVE to eat....and I would NEVER have been successful on a plan that required starvation tactics....right? Okay. So we are all on the same page. You CAN cook delicious food and still get healthy and fit. Okay. SOOOOOO, one of my ALL time fav foods is MEATBALLS and spaghetti (notice I did NOT say spaghetti and meatballs? Right. Because MEATBALLS are one of my most favoritist things in the world! Well, I do love my kids, my husband, family and my pets better....but meatballs gives them all a run for their money. )
So to get to the point....I have this super, wonderful meatball recipe that RIVALS my dad's recipe (who by the way makes the WORLDS B-E-S-T meatballs) BUT my recipe is a healthy option.....
So...yes, Jen lost 65 lbs in the past year by eating a TON of meatballs (special note: in moderation over the course of a year - NOT all in one daysmile emoticon ) ! Ha! It's true.....We make this recipe pretty much every week.
Now if you are a "fixer" 3 of my meatballs = 1 red and 1/2 a yellow. Okay? Oh and you count the sauce as part of a purple.
21 Day Fix Meatballs:
Ingredients: (non stick cooking spray)
1 1/2 lbs -- Lean Ground Turkey Breast
1 tsp Sea Salt
1 tsp Dry Mustard
1 tsp Smoked Paprika (I just use regular paprika)
1 Large Egg ( lightly beaten)
3/4 Cups quick-cooking rolled oats
2 TBS minced garlic
a few shakes of dried parsley
2 Tbsp tomato sauce, no sugar added (you can get this at Aldis)
Directions:
1. Preheat oven to 400 F
2. Lightly coat large baking sheet with olive oil spray
3. Combine turkey, salt, mustard, paprika, egg, oats, garlic, parsley, and tomato sauce in a large bowl; mix well by hand.
4. Roll mixture into 30 1 inch meatballs (I make mine a little bigger than 1"....more like 2"). Place on prepared baking sheet.
5. Bake for 30 minutes, or until no longer pink in the middle.
6. Place in spaghetti sauce and simmer for 20 minutes.
If I'm in a pinch, I will put the meatballs in jarred (organic) sauce from the store....if I have time, I make my own homemade sauce as it's a healthier alternative.
I hope your family loves this as much as mine does. My kids LOVE meatball and spaghetti night at our house.
