Delicious 21 Day Fix Meatloaf


My family LOVED this meatloaf.  Even the kids gobbled it down without complaint.  It's probably my favorite 21 day fix meatloaf recipe that we've tried in 2.5 years. I hope you love it too!  


Ingredients
  1. 1 1/2 lbs lean ground turkey
  2. 2 eggs
  3. 1 cup shredded zucchini/shredded carrot mix 
  4. 1/2 cup quick oats
  5. 1/2 cup yellow onion (chopped)  {or sub dried, flaked onions - 1/3 C]
  6. 1 tsp sea salt
  7. 1 tsp oregano, dried
  8. 1/2 tsp parsley, dried
  9. 1/4 tsp black pepper
  10. 1 clove garlic, minced
sauce
  1. 4 Tbsp Raw Honey
  2. 1 can tomato paste
  3. 1/4 cup cooking sherry
instructions
  1. Heat oven to 375 F.
  2. In large bowl, add all ingredients (except the sauce ingredients), mix well until combined
  3. Press the meat mixture into a loaf pan
  4. In small bowl, whisk sauce ingredients together. Remove meatloaf from oven, spread mixture over the loaf and cook for 1 hour.
  5. Increase oven temp to 450 F and cook for another 8 minutes 
  6. Let stand 5 minutes before serving. Enjoy!

  1. 1/6 of the loaf is 1 Red, 1/4 (or so) Green, 1 tsp, 1/4 Yellow (if you want to get technical)

Our Meal Plan this week!!

We're Baaaack!

Okay, so the vegetarian thing did NOT work for us!!  I think it's a wonderful lifestyle but I'm just not ready for that type of commitment right now.  Also I figured out - I LIKE my meat!  lol
I'm really glad we tired going vegetarian as we discovered MANY new whole food items and recipes.  Who knows what the future holds.

For now, we are ALL IN with the Shift Shop meal plan.   The recipes are to DIE for -  BEST I've had in a LOOOONG time!!!   ALL of the recipes on our meal plan this week have been taken from that meal plan guide.  If you are interested in learning more about the Shift Shop program, contact me @ nedrichjen@gmail.com and we can chat about your options.

Ron and I are going into week 3 of Shift Shop and we've seen some great changes happening both physically and mentally.  This is the first time in a LOOOONG time I've been able to go ALL IN with a program and track ALL of my food.  The workouts are super fun & challenging.  We are really enjoying it!
