4 Ingredient Peanut butter Oat Bars

Carb cravings were getting the best of me this week....In order to stay of our my kids' Eat-N-Park cookies, I decided to whip up these treats for a healthy "sweet" option. 

1.  Spray a 9X9 pan with cooking spray
2.  Melt 1 C natural Peanut Butter and 1/2 C honey in the microwave for 1-2 minutes. 
3.  Add 3 C quick oats and 1/3 C flax seeds
4.  Mix well
5.  Spread into the prepared pan
6.  Place pan in freezer for 15 minutes
7.  Cut into squares and store in an air tight container
**  store them in the fridge or freezer to keep them firm.

There is a yummy crock pot of goodness in my kitchen and it smells sooooo good!! It's beef and broccoli night - our FAV "21 day fix" recipe EVER! It's become a weekly tradition! I LOVE it when my peeps come home and get excited because "it's beef and broccoli night!" I love to MAKE it because the recipe is quick and easy:
Want to give it a try? From my family to yours Bon Appetit!
2 lb beef, thinly sliced (I go for whatever is on sale)
1 can organic beef broth 
1/2 cup low sodium soy sauce
1/3 cup organic brown sugar
1 tablespoon minced garlic
1 tablespoon sesame oil
2 tablespoons cornstarch
one head of fresh broccoli
2 cups basmati rice
Put the sliced beef in the bottom of the crock pot. Mix together all other ingredients and pour over the beef. Cook on low 5-6 hours.
Add broccoli (cut up), stir, and cook for another half an hour.
In the meantime, cook the rice. Serve Beef and Broccoli over rice.

So our meal plan got a small makeover....
Joey said he'd like to see pizza every Saturday and tacos on Sunday (not on Tuesday because they have "Taco Tuesday" at school - lol).

And Ron said we have way too many leftovers and we need to build in left over nights....I agree with him...our freezer is stocked right now with leftovers that I froze into individual meals that we can grab and go....but we'll be wasteful if we don't start incorporating a leftover night or two....so that's what we're going to try here with THIS meal plan.
